I was just wondering if a shorter sidewall would go around turns a bit better..I drove a hemi dodge with 20's and I liked the handling, is that partly because the tires have low sidewalls?

It's hard to compare two diffent vehicles when talking about handling, but I don't think that .5" less sidewall would be worth the extra cost of the 18" tires when compared to the prices of 17" tires.
