Odd Overheating issue...

So yesterday I had been driving about 10 mins and noticed cool air coming out of my dash vents. I then verified the HVAC selector was indeed on heat. My attention then turned to the engine temperature gauge which was pegged on the "H" followed by the water-temp dummy light and "Service Engine Soon" light. After a quick panic I pulled over. I shut the truck off, and then restarted in about 30 seconds later. The Engine temp gauge was back to normal operating range. I popped the hood and found coolant had purged from my reservoir and ran down the front drivers side chassis. The reservoir was still showing almost full, engine did not feel particularly hot and no signs of any leakage.
After I let the truck sit for about 10 mins I restarted it, ran up to operating temp, while changing the engine speed from an idle to 3k randomly. Everything seemed to be working fine(No leaks). I drove home (about 12 miles) and the engine and temp seemed to be normal.
I let the truck cool down completely, topped off the reservoir (less than a quart) and fired up the truck. Ran up to normal operating temperature and again no overheating or leaks. Everything seems ok.
As for other observations, over the last month or so I've had a random account of "gurgling" from the Heatercore after I shut the truck off. Also the coolant does seem to almost have a mild exhaust odor to it. Engine oil appears to be normal (not milky brown). I have not touched the cooling system or done any work to it in the last 5 months I've owned the truck.
I am guessing the sparatic engine temperature change could of been caused by two things;

1. Air in the cooling system (intake or head gasket?)

2. Thermostat stuck closed, then finally popped open due to the excessive temperature and pressure from remaining closed for too long.

I'm planning on flushing the coolant and changing the thermostat tomorrow night to see if that helps. BTW, what is the factory recommended coolant for these trucks? Any help/other ideas/suggestions would be greatly appreciated.
Thanks,
Kenny

Did you ever figure it out.You need to do a hyrdocarbon test on your cooling system
