I just upped my tire size to LT265/75R16's on my 1999 4.6L 4x4.
It will decrease gas milage a bit from the increase in tire diameter in the city, may increase milage on highway. The extra load on the tranny is not really noticable, mainly just when cold, before everything warms up. The transmission will shift more often on the highway, hills, and under load.
The larger diameter tires will also make it harder to stop, fewer rotations/distance. You will be braking harder to stop in the same distance.
All in all it's a good move. The truck will look, feel, and ride better. If you get LT instead of P tires you can adjust the tire pressure from 35psi for a cushy ride up to 50 psi (or more depending on load rating) for good handling under load.

The 265's are a pretty decent compromise with looks and performance. I went from a 235/70/16 and had to adjust the speedo gear. Since you have a '99, you'll have to adjust through the computer, but a 265/75/16 is the same height as a 265/70/17 that came stock on the ORP package, so any Ford dealer should be able to recalibrate your computer.
Get an LT rated tire however. It's a stiffer sidewall, which will give you better handling on curves and such. Plus, it's a truck tire, designed for trucks. Leave the Passenger rated tires for cars.
