what was your original tire size?
Here is a breakdown of 255/70/16
255 - tire width in millimeters - 255 mm = app. 10 inch
70 - sidewall size - ratio compared to the width - 70% of
10 in = 7 in
16 - 16 in wheel
If you increased your tire width without compensating for it in with sidewall ratio, yes, your speedo will be affected.
you have a 30 in tire (16+7+7), if you change this then your rearend gearing will need to be changed to get it back to the stock setting. With a larger tire, more 'power' is needed to turn it.

I just did the same change in tire size - 235 70 16 to 255 70 16. I went from Firestone Wilderness to Michelin LXT/MS. The speedometer is about 2.5 mph under at 65 mph, in other words when the spedo reads 65 you're actually doing 67.5. Not enough to bother me. BTW I really am impressed with the new Michelins.
