You could soak the bolts in penetrating fluid, periodically, for some time in advance of removing them.
I would spray them every hour or two for up to a day if I thought they might twist off.
That said, I generally spray them right away and try to take them out.
If you pay attention, you can feel when the metal is trying to twist, rather than unthread. If that happens, then let them soak.
Otherwise, take your time, and remove them right away.
I don't know what year you are dealing with, but my 90 model gave no troubles at all when I did headers last year.
I suppose older engines, or engines that may have had the manifolds toyed with in the past, could cause troubles.
