Good to know my Escape (called Es-cap-é) won't get me booted! BJ, I'd lose my happy home if I ever even suggested getting a Jeep! Howdy FrankS, Raoul and jgger!
Es-cap-é comes from the movie Finding Nemo. I've never actually seen the whole movie but the hubby saw it with our niece and he started calling it Es-cap-é shortly after I bought it...it stuck!

Best I could come up with on such short notice. It was a super yummy cake though!
Banana-Huckleberry Cake
1 cup sugar
1/2 cup butter, room temperature
2 eggs
1/4 cup buttermilk
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp salt
3 large ripe bananas, mashed
1 1/2 cup huckleberries (blueberries would be a good substitute if you don't have access to huckleberries)
In a mixing bowl, cream sugar and butter. Add the eggs, buttermilk and vanilla; blend until smooth. In another bowl combine flour, baking soda and salt. Gradually add to the creamed mixture and mix well. (The batter will be pretty stiff at this point but the addition of the bananas, moistens it up). Stir in the bananas and huckleberries. Pour into a greased and floured 9x13 cake pan. Bake at 350° for 35 minutes. Frost if desired.
Frosting...
1 cup butter, room temperature
2 tsp vanilla
4 cups powdered sugar
6 Tbsp milk (you may not need all of this, just until spreading consistency)
Cream together the butter and vanilla. Alternately add the powdered sugar and milk, mixing well on low speed after each addition. I didn't use all of this frosting, it made an awful lot!
