What do you want to get out of an upgrade? Power, efficiency?
The 302 is a great engine for engines of that era. Good power/efficiency tradeoff and reliable. Parts are easy to find, and easy to work on. Maybe invest in a big-bore and new camshaft if you're looking to make the truck more racey- but say goodbye to double digit mpgs. If you haven't already done it - give'r a tuneup.
If I were going to invest the headache and money in putting something different in, I would pull a Diesel engine from a 250/350. But at that point, you're probably better off buying a different truck.

You'd be as far ahead to just put a fresh 302 in. By the time you put out the money to put in a 351 or mess with a built up 302, you could be dropping a rebuilt 0 mile 302 in there.
No headaches, no messing around with this matches/doesn't match that. Just new motor reliability and performance.
