2012 f150 5.0 Cats

So I currently have my truck straight piped single into duals but im thinking about getting true duals or a x pipe and getting rid of the cats. Im not sure what would be the best option, taking it out and putting a piece of pipe, taking out all the stuff on the inside, or are there any other options. I'm not super worried about the legal part of it just wanting to know what will sound the best and not lose a bunch of power or have a bunch of issues.

You can't just "cut" the cats off and expect the truck to function properly. You'll get terrible performance.

If you want to do it right, get o2 eliminators to plug into the o2 sensor sockets. These act as if you have properly functioning sensors and cats.

Then chop off the cats do what you want to do with the piping.

Most states as long as there is no CEL (pending/confirmed) codes, you can be "legal" in the same regard to pass smog.
