Lightbulb Torque Converter

I have plans to do a rebuild in engin and tranny.
I currently run an AOD. The trans has served me well, and I have really no reason to change to another type.

The only thing is, what would a good stall speed torque conver, both in rpm #' and brand be for a truck that sees some towing and 4 wheeling around in the mountains.

Second part of this is, I'd like to be able to select the gear I'd like to use, especially when running around in low-range. Righ now it is a bit of an art to stay in 2nd gear, when D or 3rd is too high and 1st is too low. Some sort of shifting kit maybe?
