if your going through texas then you need to set them cooler than what you have em at its hot here. taking a temp with an ir gun on the radiator probbally wont give you accurate readings being that the fluid inside the radiator will be a little hotter than the outside of the radiator due to heat transfer stuff i would take the temp with that ir thing right where the water going to the radiator comes out of the heads to the hose you can figure out wich one of the hoses it is by cranking the truck when cold and just wait to see which hose gets first. and take the temp when both of your hoses get hot if you put your hands on each side of the radiator you can tell exactly when the thernostat opens because the other cold side will get hot real quick. and i would set the low speed fan for that temperature when it opens and water starts to flow through and set the high speed fan just above it a few degrees.

oh yea and to answer your question 196 is when it opens well between about 192 to 196 it will start opening.
