Thinning out wiring harness and vacuum lines?

What's up guys, I just started a thread about how I'm doing a full tear down on my truck. This is a purpose built, race truck. Please no lecturing me on how things are irreversible as, trust me, I am aware of what I'm doing and wanting to do. So I'm getting rid of the AC, heat, vacuum brakes, and ABS control module at the moment. I just wanted to know what all can I unplug, remove and throw in the garbage? Looking at where all sorts of things go, I can't quite understand what has to stay and what doesn't really. I know this is a little complicated to just tell over the internet but does someone maybe have a write up or something on this? Let me know, any help is appreciated.
