Nitto trail grapplers
Looking to buy nitto trail grapplers 285/70-17 on a stock 2014 ecoboost. The rims I want are 17x9 with a 0mm offset that should fit with those tires if I have a stock truck right just wanna make sure before I make a 1600$ mistake I looked on the forums to find my answer but can't get exactly what I'm looking for.

Those Ballistics would potentially fit better, but I'd just get what you want. The 0 offset will stick out more, whereas the +25 would be closer to stock. The tires are only 1" taller than the stock 275/55/20s that come on all the ones with 20" wheels, and are only a little wider, so should be fine even with those 0 offset ones.

Offset, when the width of the wheels you're comparing is the same, indicates the amount of backspacing. Backspacing, essentially, translates to how far the wheels stick out. You can Google for images that explain this if it's confusing and you care to learn more. 0 offset is an "offroad" style wheel that will poke out a little bit.
Trimming won't void any sort of warranty and it's just about impossible to see that any trimming of the plastic valance has been done unless you stick your head in the wheel well and look. For a leveling kit, the only warranty that can be voided by that is ball joints and potentially CV joints. However, if you were to add a 1" or 1.5" level, the additional stress on those components would be very minimal.
But again, you should be perfectly fine with that set up. Trimming is easy, quick, and not noticeable, and I'm confident that that is all you would have to do to fit those 17x9 0 offset wheels and tires. And you may not even have to trim at all.

I had 20x8.5 +18 Eagle Alloy wheels with 275/60/20 (33.0x10.8") BFG Rugged Terrains on my leveled (2" added front and back) 2WD before. So that sat right about how yours would. Now I have 20x10 -24 Fuel Mavericks with 35x12.5x20 Trail Grapplers. That first set of wheels and tires would be pretty darn similar to how yours with be with the +25's. But yours would poke out just a little more because the Trail Grapplers are wide.
Here are a bunch of pictures of both:

No problem! It's unnerving trying to find out what'll fit.
