Imo, 210F is not too bad if that's the highest temp you've seen while towing. I installed Troyer's Active Trans Cooler in my '00 4.6:

and it really dropped the trans fluid temp! I rarely see 180F now and when I do the trans cooler fan kicks on and brings the temp down quickly. (Trans temp. as reported by ScanGuageII.) When I installed mine, I bought some extra rubber fuel/oil line to locate the cooler where I wanted it. Other than that, the kit has everything you need. There are other good coolers out there, too. A search of this site will turn up a bunch of 'em.

Also, as mentioned above, stay out of OD and choose a gear that keeps your TC locked to keep everything as cool as possible.
